1 cup Japanese white rice
4 small beets - small diced
1 hand full okura - sliced
2 hand full baby spinach
Pine nuts much as you like
1 & 1/4 cup broth
( i use shitake mushroom broth from Japanese market, but you can do chicken or simple vegetable broth)

Cook rice, beets in broth(i use rice cooker:)

just replace water to broth

Right before rice finish, sauteed okura and spinach with very little olive oil.  Add salt & pepper

Mix beets rice, sauteed okura, spinach & pine nuts in the bowl.
